Ingredients

  • 500g bread flour
  • 350ml water (room temperature)
  • 100g active sourdough starter
  • 10g salt
  • 1 cup fresh blueberries
  • 1/3 cup cream cheese (softened)
  • Zest of 1 lemon
  • 2 tablespoons granulated sugar
  • 2 tablespoons honey (for glaze)
  • 1 tablespoon fresh lemon juice (for glaze)

Instructions

  1. In a mixing bowl, combine the bread flour, water, and sourdough starter. Allow to rest for 30 minutes.
  2. Add salt and knead until well combined. Cover and let rise for 4-6 hours, performing stretch-and-fold every 30 minutes.
  3. Prepare the filling by mixing cream cheese, lemon zest, and sugar in a separate bowl until smooth.
  4. Gently fold in blueberries during the final stretch-and-fold of the dough.
  5. Shape the dough into a rectangle on a floured surface, spread the cream cheese mixture on top, then roll it up tightly.
  6. Place seam-side up in a banneton and refrigerate overnight (8-12 hours).
  7. Preheat your oven with a Dutch oven at 250°C (482°F). Bake the dough for 20 minutes with the lid on; then lower to 220°C (428°F) and bake uncovered for another 20-25 minutes until golden brown.
  8. Brush warm loaf with honey-lemon glaze before serving.
