Ingredients
- ¾ cup all-purpose flour
- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1¼ cups dark chocolate, chopped
- ¼ cup butter
- 2 room temperature eggs
- ¾ cup caster sugar
- ½ cup demerara sugar
- 1 teaspoon vanilla extract
- ½ cup chocolate chips
Instructions
- Preheat the oven to 160ºC (320ºF) fan or 170ºC (338ºF) conventional. Line a baking tray with parchment paper.
- Melt the chopped dark chocolate and butter in a heatproof bowl over simmering water until smooth. Stir in vanilla extract.
- In another bowl, whisk eggs, caster sugar, and demerara sugar on high speed until light and fluffy.
- Sift together flour, cocoa powder, baking powder, salt, and chocolate chips in a separate bowl.
- Gently fold the melted chocolate mixture into the egg mixture. Then fold in dry ingredients until just combined.
- Scoop tablespoon-sized portions onto the lined tray, spaced apart. Bake for 12-14 minutes until tops are crackly.
- Let cool on the tray for about 10 minutes before transferring to a wire rack.
