  • 1 medium onion, finely diced
  • 1 medium carrot, finely diced
  • 2 celery stalks, finely diced
  • 2 large garlic cloves, minced
  • 1 lb (500 g) lean ground beef
  • ½ cup (100 ml) dry red wine
  • 2 tablespoons tomato paste
  • 2 cans (14 oz / 400 g each) crushed tomatoes
  • lb (900 g) gnocchi
  • Grated Parmesan for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat. Add onion, carrot, and celery; cook for 8–10 minutes until softened.
  2. Stir in garlic and ground beef; cook until browned, breaking up meat with a spoon.
  3. Pour in red wine and simmer for 1–2 minutes before adding tomato paste and herbs.
  4. Stir in crushed tomatoes and let simmer uncovered for about 15 minutes.
  5. Cook gnocchi in boiling salted water until they float; drain well.
  6. Combine cooked gnocchi with the sauce, mixing in grated Parmesan before serving.
