- 1.5 lb skinless boneless chicken thighs

- 1 teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon red pepper flakes

- 2 cups cooked jasmine rice
- 15 oz canned chickpeas, drained
- 6 oz feta cheese, diced into small cubes
- 1 tablespoon extra virgin olive oil
- 1 tablespoon freshly squeezed lemon juice
- ¼ teaspoon dried oregano
- 2 tablespoons chopped fresh oregano (optional)
- Fresh oregano for garnish
Instructions
- Season chicken thighs with oregano, paprika, salt, and red pepper flakes. Heat olive oil in a heavy-bottomed skillet over medium heat and cook chicken for about 10 minutes until seared and cooked through (internal temperature of 165°F).
- In the same skillet, sauté half of the grape tomatoes and garlic until softened. Add spinach, cooked rice, chickpeas, lemon juice, and remaining tomatoes; stir to combine.
- Prepare feta mixture by combining feta cheese with olive oil and lemon juice in a bowl.
- Mix half of the feta into the rice mixture, return chicken to skillet to warm through, then top with remaining feta before serving.
