  • 4 boneless, skinless chicken breasts
  • 1 ½ cups quinoa
  • ¼ cup olive oil
  • Juice of 2 lemons
  • 1 tablespoon honey
  • 1 English cucumber, diced
  • 4 Roma tomatoes, chopped
  • 1 medium red onion, diced
  • 1 cup feta cheese, crumbled
  • 1 cup kalamata olives

Instructions

  1. Cook the quinoa by simmering it with water and salt until tender (about 12–15 minutes). Set aside to cool.
  2. In a bowl or jar, whisk together olive oil, lemon juice, honey, garlic, oregano, basil, salt, and pepper to make the dressing.
  3. Marinate the chicken with one-third of the dressing for at least 30 minutes. Grill the chicken over medium-high heat until fully cooked (6–8 minutes per side).
  4. Assemble bowls by dividing quinoa and topping with sliced chicken, cucumber, tomatoes, red onion, feta cheese, and olives.
  5. Drizzle with reserved dressing before serving.
