Ingredients
- 1 lb ground chicken
- ⅓ cup almond flour
- ¼ cup fresh parsley
- 2 tsp fresh dill
- 3 cloves garlic (minced)
- ¼ cup feta cheese (crumbled)
- 1 cup orzo pasta
- 2 cups chicken broth
- Juice of 1 lemon
Instructions
- In a large bowl, mix ground chicken, almond flour, parsley, dill, garlic, feta, onion powder, oregano, cumin, salt, pepper, lemon zest, and olive oil until combined. Form into meatballs (1½–2 inches).

- In the same skillet, bring chicken broth to a boil; add orzo and cook according to package instructions (8–10 minutes). Stir in lemon juice and olive oil once cooked.
