  • 3 cups broccoli florets
  • 1 yellow onion, diced
  • 1 red bell pepper, sliced
  • 1 tablespoon peanut oil (or vegetable/olive oil)
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 3 tablespoons packed brown sugar
  • 12 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground ginger
  • 1 teaspoon toasted sesame oil
  • Salt and white pepper, to taste
  • 3 cups cooked rice (any kind)

Instructions

  1. In a small bowl, mix cornstarch with cold water. In another bowl, whisk together beef broth, soy sauce, brown sugar, minced garlic, ground ginger, and sesame oil.
  2. Heat oil in a large skillet or wok over medium heat. Add broccoli; cook for about 4-5 minutes until slightly softened. Remove and set aside.
  3. In the same skillet, cook ground beef and diced onion over medium-high heat until browned. Drain excess grease if necessary.
  4. Add sliced bell pepper and cook briefly before pouring in the prepared sauce. Bring to a boil and simmer for 2-3 minutes.
  5. Stir in the cornstarch mixture until thickened; then return broccoli to the skillet and combine. Serve hot over cooked rice.
