- 12 large eggs
- 32 ounces small curd cottage cheese
- 16 ounces shredded Colby Jack cheese
- ¾ cup unsalted butter
- ¾ cup all-purpose flour (or gluten-free substitute)
- 10 ounces frozen chopped spinach (thawed and drained)
- 1 pound cooked bacon (chopped)
Instructions
- Preheat oven to 350°F. Lightly spray a 9×13-inch baking pan with nonstick cooking spray.
- Cook bacon until crispy, then chop and set aside.
- In a large bowl, whisk together eggs. Stir in cottage cheese, melted butter, spinach, half of the bacon, half of the Colby Jack cheese, diced red bell pepper, and minced onion until well combined.
- Add flour, seasoned salt, black pepper, and half of the Parmesan cheese; mix gently.
- Pour mixture into the prepared baking pan and top with remaining cheeses, bacon, and bell pepper.
- Cover with foil and bake for about 40 minutes. Remove foil and continue baking for an additional 20-30 minutes until the center is firm.
- Let rest for 15-20 minutes before serving.
