  • 1½ cups grated zucchini
  • 2 large eggs
  • ¼ cup avocado oil (or olive oil)
  • ⅓ cup maple syrup
  • 2 teaspoons vanilla extract
  • ⅔ cup unsweetened applesauce
  • 1¼ cups whole wheat flour
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ⅓ cup chocolate chips

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a muffin tin with liners or grease.
  2. Squeeze excess moisture from the grated zucchini using a clean towel.
  3. In a large bowl, mix the drained zucchini with eggs, oil, maple syrup, vanilla, and applesauce until well combined.
  4. Add whole wheat flour, cocoa powder, baking soda, baking powder, cinnamon, and salt. Stir gently until just mixed.
  5. Fold in chocolate chips.
  6. Fill muffin cups three-quarters full and top with extra chocolate chips if desired.
  7. Bake for 18–20 minutes until a toothpick comes out clean.
  8. Cool for 10 minutes before transferring to a wire rack.
