Ingredients
- 1 ½ cups grated zucchini
- 1 ¾ cups whole wheat flour
- ⅓ cup melted coconut oil
- ½ cup honey or maple syrup
- 2 eggs (or flax eggs for vegan)
- ½ cup milk of choice (or water)
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon sea salt
Instructions
- Preheat the oven to 325°F (163°C). Grease a 9” x 5” loaf pan.
- In a large mixing bowl, whisk together melted coconut oil and honey until combined. Add eggs and whisk until smooth.
- Stir in the milk, baking soda, cinnamon, sea salt, and grated zucchini.
- Gradually mix in the flour until just combined; fold in nuts if using.
- Pour the batter into the prepared loaf pan and sprinkle with cinnamon on top.
- Bake for 55 to 60 minutes until a toothpick comes out clean.
- Allow to cool before slicing.
