Ingredients

  • 1 ½ cups grated zucchini
  • 1 ¾ cups whole wheat flour
  • ⅓ cup melted coconut oil
  • ½ cup honey or maple syrup
  • 2 eggs (or flax eggs for vegan)
  • ½ cup milk of choice (or water)
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon sea salt

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9” x 5” loaf pan.
  2. In a large mixing bowl, whisk together melted coconut oil and honey until combined. Add eggs and whisk until smooth.
  3. Stir in the milk, baking soda, cinnamon, sea salt, and grated zucchini.
  4. Gradually mix in the flour until just combined; fold in nuts if using.
  5. Pour the batter into the prepared loaf pan and sprinkle with cinnamon on top.
  6. Bake for 55 to 60 minutes until a toothpick comes out clean.
  7. Allow to cool before slicing.
