  • 1/3 cup unsweetened plain Greek yogurt
  • 2 tbsp cream cheese
  • 2 tbsp sugar-free maple syrup
  • 1 egg
  • 1/4 tsp baking powder
  • 1 scoop PEScience Strawberry Cheesecake Protein Powder
  • 3/4 cup frozen strawberries

Instructions

  1. Preheat your oven to 350°F and line muffin tins with liners.
  2. Prepare the crust by mixing graham cracker crumbs with melted butter and pressing the mixture into the bottom of each muffin tin.
  3. In a blender, combine cottage cheese, Greek yogurt, cream cheese, maple syrup, egg, baking powder, and protein powder; blend until smooth.
  4. Pour the cheesecake mixture over the crusts in muffin tins and bake for 38-41 minutes until set.
  5. Meanwhile, heat frozen strawberries in a saucepan until they break down into a sauce.
  6. Allow cheesecakes to cool completely before topping with strawberry sauce. Refrigerate overnight for best results.
