  • 1 tbsp avocado oil
  • ½ tsp sea salt
  • ½ tsp black pepper
  • 2 tbsp extra virgin olive oil
  • 2 tbsp honey
  • 4 tbsp balsamic vinegar
  • 2 cloves garlic (grated)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Halve the brussels sprouts and place them on a baking sheet. Drizzle with avocado oil, season with salt and pepper, and toss to coat.
  3. Arrange the sprouts cut side down on the sheet and roast for 18-20 minutes or until golden brown and crispy.
  4. In a saucepan over medium heat, combine olive oil, honey, balsamic vinegar, and grated garlic. Whisk together and simmer for about 5 minutes until slightly thickened.
  5. Once the sprouts are roasted, transfer them to a serving dish and toss with the balsamic sauce. Garnish with chopped parsley before serving.
