  • 1 tablespoon avocado oil
  • 1 ¼ pounds boneless, skinless chicken breasts
  • ⅓ cup honey
  • 23 tablespoons sriracha
  • 2 medium zucchini
  • 1 medium summer squash
  • 1 ½ cups shredded carrots
  • 2 cups cooked rice or quinoa
  • 1 medium avocado

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat avocado oil in a cast iron skillet over medium-high heat. Sear chicken breasts for about 5 minutes per side until browned.
  3. Mix honey, sriracha, minced garlic, salt, pepper, and optional spices in a bowl.
  4. Remove chicken; sauté zucchini and summer squash for 1-2 minutes.
  5. Layer sautéed veggies with shredded carrots in the skillet; place chicken on top and coat with sauce.
  6. Bake for about 15 minutes until chicken is cooked through.
  7. Optional: Broil for an extra caramelized finish.
