  • 2 medium onions (sliced)
  • 1 cup chickpea flour
  • 1 Tbsp nutritional yeast (optional)
  • 3/4 tsp ground cumin
  • 3/4 tsp salt
  • 1/2 tsp ground turmeric
  • 1/2 cup water
  • 1 tsp lime juice (or lemon juice)
  • 1 green hot chili pepper (finely chopped)
  • 1 Tbsp parsley (chopped or cilantro)
  • 3 Tbsp oil (for frying; coconut recommended)

Instructions

  1. Slice the onions thinly using a knife or mandoline and set aside.
  2. In a mixing bowl, combine chickpea flour, nutritional yeast, cumin, salt, turmeric, water, lime juice, chili pepper, and parsley. Whisk until the batter is medium-thick.
  3. Add sliced onions to the batter and mix well to coat.
  4. Heat oil in a large skillet over medium heat. Drop small portions of the mixture into the pan—fry about four fritters at a time.
  5. Cook each bhaji for 2–4 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
