  • 4 slices bacon
  • 1 large onion, sliced
  • ½ cup Irish stout (such as Guinness)
  • ½ cup sharp cheddar cheese, grated
  • 4 brioche burger buns
  • ½ cup sour cream
  • 2 tablespoons Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy; drain on paper towels.
  2. Sauté the onions in the same skillet until caramelized, about 10–15 minutes. Add Guinness and simmer until reduced. Season with salt and pepper; set aside.
  3. In a bowl, combine ground beef with Worcestershire sauce, salt, and pepper; form into four patties.
  4. Cook patties on a preheated grill or skillet for about 3–4 minutes per side. Top with cheddar during the last minute to melt.
  5. Whisk together sour cream and Dijon mustard in a small bowl; set aside.
  6. Butter and toast brioche buns until golden brown.
