  • 1 pound ground turkey sausage
  • 1 large yellow onion
  • 3 medium carrots
  • 2 medium celery ribs
  • 4 cloves garlic
  • 5 cups low sodium chicken broth
  • 1 can cannellini beans
  • 1 can red kidney beans
  • 1 can diced tomatoes
  • 1 cup dried pasta (elbow macaroni or ditalini)

Instructions

  1. Heat olive oil in a large soup pot over medium-high heat. Add the ground sausage and brown for about 4–5 minutes.
  2. Stir in diced onion, carrots, celery, rosemary, thyme, and parsley; sauté for about 6 minutes until softened.
  3. Add minced garlic and cook for an additional minute.
  4. Pour in chicken broth, add beans, diced tomatoes, tomato sauce, salt, pepper, and bay leaves. Bring to a boil then reduce to simmer for 5 minutes.
  5. Add pasta and cook for another 9–10 minutes until al dente.
  6. Remove bay leaves, stir in Parmesan cheese; adjust consistency with broth or water if needed.
  7. Serve hot with additional Parmesan and optional crushed red pepper flakes.
