  • 3 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 3 cups all-purpose flour
  • ⅔ cup warm dairy-free milk
  • ½ cup vegan butter
  • 3 tablespoons granulated sugar
  • 3 teaspoons instant dry yeast
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Pinch of salt
  • ¼ cup granulated sugar (optional for glaze)
  • 2 tablespoons water (optional for glaze)

Instructions

  1. Prepare the quick raspberry jam by simmering raspberries, sugar, and cornstarch in a saucepan until thickened. Cool.
  2. In a mixing bowl or stand mixer, combine flour, warm milk, vegan butter, sugar, yeast, spices, and salt. Knead until soft and elastic.
  3. Let the dough rise for 1 hour until doubled in size.
  4. Roll out the dough into a rectangle, spread cooled jam over it, roll into a log, twist halves together, and place in a loaf tin to rise again.
  5. Bake at 170°C (340°F) for 30–40 minutes until golden brown.
