  • 1½ cups walnuts (raw and unsalted)
  • ½ cup pumpkin seeds (unshelled)
  • 6 cups mixed salad greens
  • 2 avocados (sliced)
  • 2 cups pomegranate seeds
  • 1 cup crumbled cheese (blue, feta, or goat cheese)
  • ⅓ cup extra virgin olive oil
  • ¼ cup balsamic vinegar or apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon fig jam
  • 2 teaspoons orange zest
  • 2 tablespoons fresh orange juice
  • Salt and black pepper, to taste
  • Chili flakes, to taste
  • 2 tablespoons fresh parsley (finely chopped)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Toss walnuts and pumpkin seeds with honey and chipotle powder; spread on baking sheet. Bake for 15 minutes until toasted.
  3. In a large bowl, combine mixed greens and frisée; top with diced apples or pears, sliced avocados, pomegranate seeds, cooled nuts, and cheese.
  4. To make the dressing: Combine all ingredients in a jar; shake until well mixed.
  5. Drizzle dressing over salad just before serving; toss gently.
