  • ¾ cup buttermilk
  • 2 tablespoons lemon zest
  • ½ cup lemon juice
  • 1½ cups fresh blueberries
  • 1 tablespoon all-purpose flour (to toss with blueberries)
  • 8 oz cream cheese
  • ½ cup unsalted butter (for frosting)
  • 3½ cups confectioners’ sugar
  • 1 tablespoon heavy cream
  • 1 teaspoon pure vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat oven to 350°F (177°C). Grease three 8-inch round cake pans and line bottoms with parchment paper.
  2. In a mixer, cream together softened butter and sugars until light. Add eggs and vanilla; mix well.
  3. In another bowl, whisk flour, baking powder, baking soda, and salt. Gradually add to wet mixture along with buttermilk, lemon zest, and juice. Mix until just combined.
  4. Toss blueberries in flour to prevent sinking and gently fold into batter.
  5. Divide batter among prepared pans and bake for 22–26 minutes until a toothpick comes out clean. Cool completely.
  6. For frosting, beat cream cheese and butter until smooth; add confectioners’ sugar, cream, vanilla, and salt until fluffy.
  7. Level cakes if needed, then layer with frosting in between and cover the top and sides.
