- 4 large egg yolks
- 2 tablespoons heavy cream
- ⅔ cup fresh lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
- For the crust, mix flour, granulated sugar, brown sugar, salt, and baking powder in a bowl. Stir in melted butter until crumbly, then press two-thirds into the prepared pan. Bake for 15 minutes until golden.
- For the filling, whisk together sweetened condensed milk, egg yolks, heavy cream, and salt until smooth. Gradually blend in fresh lemon juice.
- Pour the filling over the baked crust and sprinkle remaining crumb mixture on top. Bake for another 15-20 minutes until golden brown.
