  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • ¾ teaspoon salt
  • ¼ teaspoon baking powder
  • 12 tablespoons unsalted butter (melted)
  • 1 (14-ounce) can sweetened condensed milk
  • 4 large egg yolks
  • 2 tablespoons heavy cream
  • ⅔ cup fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. For the crust, mix flour, granulated sugar, brown sugar, salt, and baking powder in a bowl. Stir in melted butter until crumbly, then press two-thirds into the prepared pan. Bake for 15 minutes until golden.
  3. For the filling, whisk together sweetened condensed milk, egg yolks, heavy cream, and salt until smooth. Gradually blend in fresh lemon juice.
  4. Pour the filling over the baked crust and sprinkle remaining crumb mixture on top. Bake for another 15-20 minutes until golden brown.
  5. Cool completely at room temperature before refrigerating for at least 4 hours before slicing.
