  • 1 cup dried red kidney beans (soaked overnight)
  • 1 cup long white grain rice
  • 4 vegan sausages (sliced)
  • 1 medium onion (diced)
  • 2 stalks celery (diced)
  • 1 medium green bell pepper (diced)
  • 3 cloves garlic (chopped)
  • 2 tablespoons Cajun seasoning
  • 5 cups vegetable stock
  • Salt and black pepper to taste

Instructions

  1. In a large pot, heat oil over medium heat. Add sliced vegan sausage and cook until browned.
  2. Stir in diced onion, celery, and bell pepper; sauté until onions are translucent.
  3. Add Cajun seasoning, garlic, thyme, bay leaves, and vegetable stock; stir to combine.
  4. Drain soaked kidney beans and add them to the pot along with salt and pepper.
  5. Cover and simmer for 1 to 1.5 hours until beans are tender, adding water if needed.
  6. Cook rice according to package instructions while stew simmers.
  7. Mash some beans against the pot's side to thicken the stew; simmer for another 5 minutes.
  8. Remove bay leaves and serve hot over rice.
