  • 2 medium zucchini
  • 2 medium yellow squash
  • 4 tablespoons fresh basil
  • 2 tablespoons thinly sliced green onion
  • 1/2 teaspoon dried thyme
  • 3/4 teaspoon garlic powder
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper
  • 2 tablespoons fresh parsley

Instructions

  1. Preheat the oven to 350°F (180°C) and grease an 8" x 8" baking dish.
  2. Slice zucchini and yellow squash into half-moons. Chop fresh basil and green onions.
  3. In a large bowl, mix the sliced vegetables with basil, green onions, garlic powder, thyme, mozzarella, Parmesan, salt, and pepper until well combined.
  4. Spread the mixture evenly in the baking dish and bake uncovered for 25-30 minutes until tender.
  5. Remove from the oven, top with remaining mozzarella, return to the oven for another 10-15 minutes until golden brown.
