  • 3 large boneless, skinless chicken breasts
  • 10 cups low-sodium chicken broth
  • 1 cup carrot matchsticks
  • 1 medium onion
  • 3 large garlic cloves
  • 1 cup ditalini pasta
  • 1/3 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/3 cup sun-dried tomatoes in oil

Instructions

  1. Heat a large pot over medium-high heat and add oil.
  2. Sauté chopped carrots, onion, and minced garlic until softened (about 3 minutes).
  3. Add chicken pieces and cook until lightly browned (another 3 minutes).
  4. Stir in tomato paste, sun-dried tomatoes, broth, Italian seasoning, salt, pepper, and red pepper flakes; bring to a boil.
  5. Reduce heat to low and simmer for about 10 minutes.
  6. Add ditalini pasta; stir and cover. Simmer for another 10 minutes.
  7. Stir in heavy cream, Parmesan cheese, and spinach; let sit off the heat for 5 minutes.
  8. Serve garnished with fresh parsley or basil.
