Ingredients

Scale
  • 5 ancho peppers

  • 23 chiles de árbol (optional, for spicier flavor)
  • 1 tablespoon olive oil
  • 1 large white onion, chopped
  • 3 large tomatoes, chopped
  • 5 cloves garlic, chopped
  • 1 tablespoon dried Mexican oregano
  • 1 tablespoon sea salt (or to taste)
  • 1 teaspoon cinnamon

  • 1 teaspoon ground ginger
  • 1 teaspoon black pepper
  • ½ cup apple cider vinegar
  • 2 large roasted tomatoes, chopped
  • 4 cups beef stock, divided
  • 3.5 pounds lamb shoulder (or substitute beef shank or chuck roast)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Toast ancho and guajillo peppers in a dry pan for 1-2 minutes until fragrant. Soak in hot water for 20 minutes.
  2. In the same pan, sauté onion and tomatoes in olive oil until softened, then add garlic.
  3. Blend the soaked chilies with the sautéed mixture along with seasoning and beef stock until smooth.
  4. Marinate meat with the sauce in the refrigerator for at least 2 hours (preferably overnight).
  5. Cook marinated meat in a pot with remaining beef stock and roasted tomatoes for about 3 hours until fork-tender.
  6. Serve as soup or shredded in tacos with consomé on the side.
