  • 1/4 cup powdered sugar (30g)
  • 2/3 cup sweetened condensed milk (200g)
  • 1/4 cup light brown sugar (50g)
  • 1 1/2 cups granulated sugar (300g)
  • 2/3 cup unsweetened cocoa powder (65g)
  • 1/2 cup dark chocolate chips (90g)
  • 1/2 cup heavy whipping cream (120g)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. For the shortbread crust, mix softened butter, flour, powdered sugar, and salt until crumbly; press into the bottom of the pan and bake for 15 minutes.
  3. In a saucepan over medium heat, combine sweetened condensed milk, butter, brown sugar, corn syrup, vanilla extract, and salt; stir until smooth and bubbly.
  4. Pour the caramel mixture over the baked crust and spread evenly.
  5. Prepare brownie batter by whisking granulated sugar and eggs in one bowl; in another bowl mix flour, cocoa powder, chocolate chips, powdered sugar, and salt. Combine both mixtures until smooth.
  6. Pour brownie batter over the caramel layer and bake for an additional 25-30 minutes.
  7. For the ganache topping, heat heavy cream until simmering; stir in chocolate chips until melted. Pour over cooled brownies and let set before slicing.
