  • 1½ tablespoons granulated sugar
  • 3 tablespoons butter, melted
  • 16 oz cream cheese
  • ¾ cup granulated sugar
  • 1½ tablespoons all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream
  • ¼ cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Line muffin tin with paper liners.
  2. Combine crushed graham crackers and sugar in a bowl; mix in melted butter. Press into muffin cups.
  3. Bake crusts for 5 minutes; reduce oven temperature to 325°F (160°C).
  4. Mix sugar and flour in one bowl; blend cream cheese in another until smooth. Add eggs one at a time, then vanilla, sour cream, and heavy cream.
  5. Fill crusts with cheesecake mixture and bake for 18–23 minutes until set.
  6. Cool for an hour, then refrigerate for at least 2 hours before topping and serving.
