  • 2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 175g Butter (softened)
  • 150g Sugar
  • 150ml Milk
  • 2 Large eggs (lightly beaten)
  • 1.5 teaspoons Vanilla extract

Instructions

  1. Preheat the oven to 170°C (325°F). Grease and line a loaf pan.
  2. In a bowl, sift together flour, baking powder, and salt.
  3. Cream butter and sugar until pale and fluffy. Gradually add the eggs, mixing well.
  4. Combine half of the flour mixture with half of the milk on low speed; then mix in the remaining milk and flour until just combined.
  5. Pour batter into the prepared loaf pan and bake for 1 to 1 hour and 5 minutes or until a skewer comes out clean.
  6. Cool in the pan for about 10 minutes before transferring to a cooling rack.
