  • 2/3 cup dairy-free yogurt
  • 2 tsp vanilla extract
  • 1 batch vegan cream cheese frosting

Instructions

  1. 1. Preheat the oven to 350°F (175°C). Grease and line three 8-inch cake pans.
  2. 2. Prepare vegan buttermilk by mixing dairy-free milk and apple cider vinegar; let sit for five minutes.
  3. 3. In a large bowl, combine dry ingredients: flour, baking powder, baking soda, spices, and salt.
  4. 4. In another bowl, whisk together melted vegan butter and sugars until smooth. Mix in yogurt and vanilla extract.
  5. 5. Gradually add dry ingredients alternately with vegan buttermilk into the wet mixture until just combined. Fold in grated carrots.
  6. 6. Divide batter among prepared pans and bake for 28–30 minutes or until a toothpick comes out clean.
