  • 1 (10- to 12-ounce) package white chocolate, finely chopped
  • 32 Lotus Biscoff cookies (8.8 ounces)
  • 2 tablespoons Biscoff cookie butter (optional for decoration)

Instructions

  1. Line a baking sheet with parchment paper.
  2. Crush the Biscoff cookies in a food processor until fine crumbs form.
  3. In a microwave-safe bowl, heat 1/4 cup of cookie butter for about 15-20 seconds until warm. Mix with softened cream cheese and cookie crumbs in the food processor until combined into a thick dough.
  4. Roll the mixture into 1-inch balls and place them on the prepared baking sheet. Chill for at least 1 hour or freeze for about 20 minutes.
  5. Melt white chocolate in increments in the microwave or using a double boiler until smooth.
  6. Dip each truffle into melted chocolate and return to the baking sheet to set.
