Ingredients
- 4 oz cream cheese (softened)
- 2 Tbsp powdered sugar
- 1/3 cup pumpkin puree
- 2 cups graham cracker crumbs
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 2 cups white chocolate chips
- 1–2 tsp coconut oil (optional)
Instructions
- In a mixing bowl, beat cream cheese and powdered sugar until creamy.
- Mix in pumpkin puree, 1 cup graham cracker crumbs, pumpkin pie spice, and cinnamon until well combined. Add the remaining graham cracker crumbs.
- Chill the mixture for at least 30 minutes.
- Shape into tablespoon-sized balls and place on a parchment-lined baking sheet.
- Refrigerate again for 30 minutes.
- Melt white chocolate chips in a microwave-safe bowl and dip each ball in the chocolate.
- Drizzle any leftover chocolate over the top and chill again until set.
