Ingredients

  • 2 cups heavy cream
  • 6 cups sugar (divided)
  • 1 ½ cups chopped walnuts or pecans
  • ½ cup unsalted butter
  • 1 teaspoon vanilla extract
  • ¼ teaspoon baking soda

Instructions

  1. Lightly grease a 9×13-inch baking dish and set aside.
  2. In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat for about 20 minutes, stirring frequently.
  3. Meanwhile, combine the remaining sugar and heavy cream in a large saucepan and simmer over low heat.
  4. Once the first batch of sugar has melted, pour it into the cream mixture while stirring continuously.
  5. Increase to medium heat and cook until reaching 244°F (softball stage).
  6. Remove from heat, stir in baking soda, then add butter and vanilla; mix until smooth.
  7. Allow the mixture to rest for 20 minutes before stirring in the chopped nuts.
  8. Pour into the prepared dish and let cool for 1-2 hours before slicing into squares.
