- 1 pound dried navy beans
- 8 oz thick-cut bacon, diced
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1/2 cup tomato sauce or ketchup
- 1/4 cup molasses
- 1/2 cup brown sugar
- 2 tbsp apple cider vinegar
- 1 tbsp yellow mustard
- 2 tsp Worcestershire sauce
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Soak navy beans in water overnight; drain and simmer for an hour.
- In a Dutch oven, fry bacon until crisp; add onion and garlic until softened.
- Stir in tomato sauce, molasses, brown sugar, apple cider vinegar, mustard, Worcestershire sauce, smoked paprika, salt, pepper, and bay leaf.
- Add pre-cooked beans and reserved cooking liquid; bring to a simmer.
- Bake at 325°F (160°C) for 2–3 hours with the lid on; remove lid for the last 20–30 minutes.
