  • 1/3 cup balsamic vinegar
  • 2 tbsp honey
  • 8 oz grape tomatoes, halved
  • 8 oz fresh mozzarella balls
  • Fresh basil, chopped
  • Garlic cloves, minced
  • Olive oil
  • Italian seasoning

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, honey, olive oil, garlic, Italian seasoning, salt, and pepper to make the sauce.
  3. Toss grape tomatoes with mozzarella balls and basil in another bowl; season with salt and pepper.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper and sear until golden brown on both sides.
  5. Pour the balsamic sauce over the chicken and add the tomato-mozzarella mixture on top.
  6. Bake uncovered for 18-23 minutes until chicken reaches an internal temperature of 165°F (74°C). Let rest for 5 minutes before serving.
