  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Brown chicken on both sides until golden; remove from skillet.
  2. In the same skillet, sauté onion and garlic until fragrant (2-3 minutes).
  3. Add rice to the pan; toast for another 2-3 minutes while stirring.
  4. Pour in chicken broth and heavy cream; stir to combine. Bring to a gentle simmer.
  5. Return chicken to the skillet, cover tightly, reduce heat to low, and simmer for 20-25 minutes until rice is tender and chicken is fully cooked.
  6. Stir in Parmesan cheese until melted; adjust seasoning if necessary.
