  • 5 bone-in chicken thigh fillets (skin removed)
  • 1 onion (chopped)
  • 2 large garlic cloves (minced)
  • 2 tablespoons butter (or olive oil)
  • 1 ½ cups uncooked white rice
  • 1 ½ cups hot chicken broth
  • 1 ¼ cups hot water
  • Chicken rub spices: paprika, dried thyme, garlic powder, onion powder, salt, black pepper

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a baking dish, scatter chopped onion and minced garlic; place butter in the center. Bake for about 12–15 minutes until softened.
  3. While baking, mix chicken rub ingredients and season both sides of each chicken thigh.
  4. Stir uncooked rice into the baked onion mixture.
  5. Arrange seasoned chicken thighs on top of the rice and pour hot broth and water around them.
  6. Cover tightly with aluminum foil and bake for 30 minutes.
  7. Remove foil and spray chicken lightly with oil; bake uncovered for another 20 minutes until liquid is absorbed and chicken is golden brown.
  8. Let rest for 5 minutes before serving; fluff rice with a fork and garnish if desired.
