- 1/2 cup brown sugar, packed

- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup jelly (grape or strawberry)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the egg and vanilla extract until fully combined.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this to the wet mixture until just combined.
- Scoop out two tablespoons of dough, flatten into discs, and place half on the prepared baking sheet.
- Add about 1 teaspoon of jelly to the center of each disc.
- Top with another disc of dough and press edges to seal. Use a fork to crimp the edges if desired.
- Bake for 12-15 minutes or until edges are golden brown. Allow cooling on the baking sheet for about 5 minutes before transferring to a wire rack.
