  • 1 lb boneless, skinless chicken thighs, sliced
  • Salt to taste
  • ½ cup sun-dried tomatoes, chopped
  • 1 lb asparagus, trimmed and halved
  • ¼ cup basil pesto (or more, to taste)
  • 1 cup cherry tomatoes, halved
  • 1 cup uncooked tortellini
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add seasoned chicken and sun-dried tomatoes; cook until chicken is fully cooked (5-10 minutes). Remove from skillet.
  2. In the same skillet, add asparagus and remaining sun-dried tomatoes; cook until tender (5-10 minutes). Transfer to a serving plate.
  3. Prepare tortellini as per package instructions; drain and set aside.
  4. Return chicken to the skillet with pesto; stir to combine and heat through (1-2 minutes). Add cooked tortellini and cherry tomatoes, adjusting seasoning if desired.
  5. Serve warm on a plate with asparagus; garnish with parsley.
