Ingredients

  • 10 ounces rigatoni pasta
  • 1 pound ground beef
  • 8 ounces fresh mushrooms, sliced
  • 1 large green bell pepper, chopped
  • 1 large onion, chopped
  • 2 tablespoons unsalted butter
  • 1 cup provolone cheese, diced or shredded

Instructions

  1. Cook rigatoni in salted water until al dente; drain and set aside.
  2. In a skillet, brown ground beef seasoned with salt and pepper; remove from skillet.
  3. Sauté mushrooms, bell pepper, and onion in the same skillet until softened; add garlic.
  4. Prepare cheese sauce by melting butter, whisking in flour, then gradually adding milk and half-and-half until thickened; stir in provolone until smooth.
  5. Combine pasta with half the beef and veggies; toss in cheese sauce.
  6. Serve garnished with remaining beef and veggies.
