  • 1 lb boneless, skinless chicken thighs
  • 3 tablespoons coconut oil
  • ½ yellow onion
  • ½ green bell pepper
  • ½ red bell pepper
  • 1 large garlic clove
  • 1-inch piece fresh ginger
  • 2 tablespoons soy sauce (gluten-free if needed)
  • 1 tablespoon honey
  • 1 ½ cups cubed pineapple
  • ¾ cup frozen peas
  • Juice of 1 small lime
  • Green onions and sesame seeds (for garnish)

Instructions

  1. Prepare the chicken by seasoning with salt and letting it sit for about 10 minutes.
  2. Heat 2 tablespoons of coconut oil in a large skillet over medium heat. Add the chicken and cook until no longer pink (5-7 minutes). Remove from pan.
  3. In the same skillet, melt the remaining oil. Add chopped onion and sauté for 3-4 minutes until softened. Add bell peppers, garlic, and ginger; cook for an additional 2-3 minutes.
  4. Deglaze the pan with soy sauce, scraping any browned bits.
  5. Stir in cooked rice, honey, pineapple cubes, and cooked chicken. Cook on low for about 5 minutes until heated through.
  6. Finally, add frozen peas and lime juice in the last few minutes of cooking.
  7. Serve warm, garnished with green onions and sesame seeds.
