  • 1 1/2 cups all-purpose flour, sifted
  • 1/2 teaspoon kosher salt
  • 1/3 cup seedless raspberry jam
  • Powdered sugar for dusting

Instructions

  1. In a mixing bowl, cream together softened butter and cream cheese until smooth. Gradually add sifted flour and kosher salt until a cohesive dough forms.
  2. Shape the dough into a flattened disc, wrap in plastic wrap, and refrigerate for 30 minutes.
  3. Roll out the chilled dough on a floured surface into a rectangle approximately 10×12 inches. Roll further into a larger rectangle about 10×30 inches.
  4. Spread raspberry jam over the dough, leaving a 1/2-inch border. Roll into a log from the jam-covered end and seal it by tucking the unjammed edge underneath. Chill for an additional 15 minutes.
  5. Preheat oven to 375°F (190°C). Slice the chilled log into 1/4-inch thick cookies.
  6. Arrange slices on a parchment-lined baking sheet and bake for 17-20 minutes until edges are lightly golden.
  7. Cool on a wire rack and dust with powdered sugar before serving.
