Ingredients
- 1 whole chicken (4–5 pounds)
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- Zest and juice of 2 large oranges
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 1 small onion, quartered
- 1 cup chicken broth
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix olive oil, garlic, thyme, rosemary, orange zest and juice, honey, soy sauce, Dijon mustard, salt, and pepper.
- Place chicken in a roasting pan; pour half the marinade over it and rub under the skin. Add quartered onion around the chicken.
- Pour chicken broth into the pan and cover loosely with foil.
- Roast for about 1 hour; remove foil in the last 15 minutes for crispiness. Check internal temperature (165°F/75°C) before serving.
- Let rest for 10 minutes before carving.
