Ingredients

Scale
  • 4 (6 oz) salmon fillets
  • 1 tablespoon extra-virgin olive oil
  • 3 garlic cloves, minced
  • 1 1/4 cups heavy cream
  • Juice and zest of 1 lemon
  • 2 tablespoons chopped fresh dill

Instructions

  1. Pat the salmon dry and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and sear the salmon fillets skin-side up for about 5 minutes until golden brown. Flip and cook skin-side down for another 5 minutes until crispy.
  3. Remove the salmon from the skillet, then reduce heat to medium-low and add butter followed by minced garlic. Sauté for about 30 seconds.
  4. Stir in flour to create a roux, then gradually whisk in heavy cream until thickened (about 3–4 minutes). Mix in lemon zest, juice, and dill.
  5. Return salmon to the skillet, spoon sauce over fillets, and simmer gently for an additional 2 minutes.
  6. Serve hot with your favorite sides.
