  • 1 lb sausage (your choice)
  • 4 medium potatoes
  • 1 cup asparagus
  • 1 small yellow onion
  • 2 cloves garlic
  • 1 cup shredded cheddar cheese
  • 1 cup chicken or vegetable broth
  • 2 tablespoons olive oil
  • Dried thyme, salt, and pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat, add sliced sausage, and sear for about 5–7 minutes until browned. Remove from skillet.
  3. In the same skillet, add more olive oil and sauté diced potatoes for 8–10 minutes until lightly browned. Add onion and garlic; cook until translucent (3–4 minutes).
  4. Layer the sautéed mixture in the baking dish with asparagus. Season with thyme, salt, and pepper; pour broth over top; layer seared sausage.
  5. Cover with foil and bake for 40–45 minutes until potatoes are tender. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until golden brown.
