  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)
  • 2 cups kale (chopped)
  • 5 cups chicken broth
  • 2 cups tortellini (refrigerated or frozen)
  • 1 cup heavy cream
  • 3 Tablespoons flour
  • 1 teaspoon dried basil
  • ½ teaspoon oregano
  • 1 pinch cayenne (optional)
  • 1 teaspoon hot sauce
  • ½ teaspoon mustard powder
  • ¼ teaspoon pepper
  • 1 pinch red pepper flakes
  • Salt to taste

Instructions

  1. In a large pot over medium-high heat, cook the sausage and diced onion until the sausage is browned and onions are softened.
  2. Add minced garlic and sauté for another minute.
  3. Sprinkle flour over the mixture and stir to combine for 1-2 minutes.
  4. Mix in basil, oregano, cayenne pepper, hot sauce, mustard powder, black pepper, and red pepper flakes.
  5. Pour in chicken broth and scrape any bits from the bottom of the pot. Stir in heavy cream.
  6. Bring to a gentle boil before reducing heat to a simmer.
  7. Add chopped kale and tortellini; cook for an additional 3-5 minutes until tortellini is cooked through.
  8. Taste and adjust seasoning if needed before serving.
