- 1 tsp salt
- ¼ cup canola oil
- 1 can cream-style corn (14.5 oz.)
- 3 cups shredded cheddar cheese
Instructions
- Preheat your oven to 350°F.
- In one bowl, mix cornmeal, salt, baking soda, jalapenos, and onion. In another bowl, whisk eggs, milk, oil, and cream-style corn until smooth.
- Combine wet ingredients with dry ingredients until just mixed; gently fold in cooked rice and cheddar cheese.
- Grease a 10-inch cast-iron skillet with butter and dust with cornmeal. Pour batter evenly into the skillet.
