  • 1 ½ pounds chicken thighs, cut into 1-inch pieces
  • 3 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon salt
  • 6 cloves garlic, minced
  • 1 onion, diced
  • 3 carrots, peeled and sliced
  • 2 large potatoes, cut into ½-inch cubes
  • 3 cups chicken broth
  • ½ cup milk
  • 1 cup frozen green peas
  • Fresh parsley for garnish

Instructions

  1. Season diced chicken thighs with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Sear chicken until browned (4-5 minutes).
  3. Transfer seared chicken to a slow cooker. Add flour, thyme, rosemary, garlic, onion, carrots, potatoes, chicken broth, and bay leaf. Stir well.
  4. Cover and cook on low for 7-8 hours or high for 3-4 hours.
  5. Stir in frozen peas and milk during the last 10-15 minutes of cooking.
  6. Adjust seasoning if necessary before serving.
