  • 3 cups all-purpose flour
  • 3/4 cup sourdough discard (or active starter)
  • 3/4 cup water
  • 3 tablespoons honey (or maple syrup)
  • 6 tablespoons butter (melted)
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons butter (melted) for filling
  • 1/2 cup brown sugar for filling
  • 1 tablespoon cinnamon for filling
  • 1 cup powdered sugar for frosting
  • 4 oz cream cheese (preferably full fat) for frosting
  • 2 tablespoons butter for frosting
  • 2 tablespoons cream (milk or half and half would also work) for frosting

Instructions

  1. Preheat your oven to 375°F.
  2. In a small bowl, mix melted butter, brown sugar, and cinnamon for the filling; set aside.
  3. In a large mixing bowl, combine flour, baking soda, baking powder, and salt.
  4. Add honey, melted butter, water, and sourdough discard to dry ingredients; stir until combined.
  5. Knead the dough on a floured surface until soft (about 5 minutes).
  6. Roll out dough into a rectangle (1/4 to 1/2 inch thick).
  7. Spread the cinnamon filling evenly over the dough.
  8. Roll the dough tightly into a log and slice into 12 equal pieces.
  9. Place rolls in a baking dish lined with parchment paper or in a cast iron skillet.
  10. Bake for 25-35 minutes until golden brown; allow to cool slightly before adding frosting.
