- 6 cups cornbread, cubed
- 6 cups Italian bread, cubed
- ½ cup unsalted butter
- 1 large onion, diced
- 4 stalks celery, diced
- 3 cloves garlic, minced
- 2–3 cups fat-free chicken stock
- ¼ cup fresh parsley, chopped
- 2 teaspoons poultry seasoning
- 2 large eggs, beaten
Instructions
- Preheat oven to 400°F (200°C) and spray a 9×13-inch casserole dish with non-stick cooking spray.
- Cube the cornbread and Italian bread; dry them overnight or bake at 350°F for about 10 minutes.
- In a large sauté pan, melt butter over medium heat. Cook onions and celery until soft; add garlic for an additional minute.
- In a large mixing bowl, combine dried bread cubes with sautéed vegetables, chicken stock (start with 2 cups), parsley, seasonings, salt, pepper, and beaten eggs. Adjust moisture as needed.
- Transfer mixture to prepared casserole dish and bake covered for 30 minutes. Remove foil and bake uncovered for an additional 20 minutes until golden brown.
