  2. Perform four sets of stretch and folds over one hour, resting the dough between sets.
  3. Allow dough to rise at room temperature for 3–4 hours until nearly doubled in size.
  4. Shape the dough into a tight ball and place seam-side up in a floured basket. Let it proof for another 2 hours.
  5. Preheat the oven to 460°F (238°C) with a Dutch oven inside.
  6. Score the dough and bake covered for 30 minutes, then uncovered for an additional 10 minutes until golden brown.
  7. Cool on a rack before slicing.
