  • 20 to 22 ounces super firm or firm tofu
  • 2 tablespoons canola oil
  • 1 cup full-fat canned coconut milk
  • 3 to 4 tablespoons sambal oelek
  • 4 teaspoons red curry paste
  • 1 cup thinly sliced shallots

Instructions

  1. Press and cube the tofu, removing excess moisture for a crispier texture.
  2. Heat oil in a non-stick pan over medium heat and fry the tofu cubes until golden brown on all sides (about 10 minutes).
  3. In a skillet, sauté shallots until translucent, then add coconut milk, sambal oelek, red curry paste, salt, and sugar. Simmer for 5 minutes.
